prepare 1 cup of quinoa as per packet instruction. Let cook completely, cube 1english cucumber without the pulp, 1 red pepper cubed, 1/2 cup cranberries, 1 scallion, mix well. Add 1teaspoon olive oil, salt &pepper to taste, 1.5 squeezed lemon. Mix altogether. Can be refrigerated up to 3 days.
